Ines Rosales

Sweet Olive Oil Tortas are light, crispy and flaky Sevillian biscuits. It is a Spanish creation with more than 100 years of tradition behind it. The first torta was made in Seville, the capital of Andalusia.

The main ingredients are wheat flour, extra virgin olive oil, almonds, sesame seeds, anise seeds and anise flavor. Because extra virgin olive oil is used instead of other oils, it is a healthy alternative to other pastries

Sheep Milk Cheeses

Manchego (6-months, 12-months & 15-months)

Manchego, made with 100% manchega ewes milk, is an aged cheese. It can be found semi-cured to cured. It is made primarily in La Mancha. It is one of the most well known cheeses of Spain. It has been protected by its DOC appellation (Denomination of Origin and Quality) since 1984. Manchego cheese is sliced and served up as a Tapa, it is sometimes paired with membrillo or quince paste.

Idiazabal

This cheese is made with 100% unpasteurized latxa ewes milk. This smokey cheese originated in the Goierri valley of the Basque region of Spain. It is aged from semi-cured to cured and solely made from raw sheep's milk. Idiazabal is a robust and sharp cheese. Idiazabal is matched with barbequed or grilled meats, melted on hamburgers, eaten in salads. It can always be served with bread or crackers. It is best matched with a full-bodied wine.

Etorki (Basque)

Cow Milk Cheeses

Mahón

Mahon is located in Menorca, Spain. It is made from raw or pasteurized cow's milk. The rind is rubbed with either oil or paprika, and the cheese itself is compact and crumbles as it ages. Its creamy texture makes it an ideal topping for pasta, potato, rice, and vegetable dishes. It is traditionally served as an appetizer with olive oil and rosemary.
